Homemade Bagels

In true Montreal fashion, my family loves bagels and a trip to Real Bagel to re-stock is a weekly affair. Last night (despite the lack of wood burning oven...a necessity for true Montreal bagels) I decided it would be fun to try and make them myself.

First batch of mini bagels
Second batch - slightly improved
The fact that only two are left this morning is a clear enough sign that although not perfect, they were a real hit!

Try it yourself. You will need:

  • 1 teaspoon active dry yeast
  • 1 1/4 cups warm milk
  • 1/4 cup margarine, softened
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 egg yolk
  • 3 3/4 cups all-purpose flour
  • and follow this recipe

  • Enjoy!

    1. Can you use oat flour (no gluten) or other grain than wheat?
I might be able to get a sample of sorghum flour (a type of corn) from ADM that they are starting to use for gluten free recipes :)

    3. Hehe it wasn't me! Oat flour has gluten in it. You should try soy flour. Im very impressed t I can't even be bothered to cook a dinner that requires more than 3 steps and hear you are living next door to real bagel making your own bagels.
