Good Saturday afternoon! As my dear sisters are away & probably roasting under the hot sun of the Bahamas, I have begun my week-long Spring Break by nursing a very sick guy back to health. After ginger ale, soda crackers, gatorade, pedialyte, and some Pepto... the ONLY thing that seemed to do the trick was a good old bowl of egg drop soup! Yup- when even water wouldn't stay down (my apologies for the details), egg drop soup did!
I am no Dr. but I think the combo of homemade chicken stock and the freshly grated ginger which both make their way into the soup, helped ease an upset tummy. Best part of this recipe (ok, second best because the settling effects on the stomack wins hands down!) is that it is super quick and easy to make.
EGG DROP SOUP
- 4 cups of chicken broth (homemade is best but store bought will work too)
- 1/4 tps freshly grated ginger
- 2 tps of chopped chives (or green onions)
- 2 eggs
- 1 egg yolk
- 1 1/2 tbsp cornstarch
- salt & pepper, if you want... might not want to add it if the patient's tummy is really upset
Bring 3 1/4 cups chicken broth to a rolling boil (reserve 1/4 cup for later)
Add the ginger and the chives
Mix together cornstrch with the reserved 1/4 cup of broth until smooth, set aside
Beat eggs & yolk together & slowly drizzle into the boiling broth
When the egg is cooked (this happens pretty quickly), stir in the broth & cornstarch mixutre
Let it boil for another minute or two and then serve.
